Deep Fried Pomfret Coated with Sambal, is another of our restaurant's specialties which is a favourite with our Indonesian customers. Only fresh pomfrets are used. It is a dish that requires careful control of the flames. A generous amount of sambal chilli is smeared over the fish which is deep-fried till crispy.
